I still plan on making country post, but I was intrigued by Sarah's green smoothie recipes and thought I should give green smoothies a go. Turns out, you can't even taste the spinach!! I also tried another version with mixed greens and berries, and it was delicious also. I'll have to give you the recipe for that one soon.
This particular recipe tastes so peanut buttery with hints of banana and pineapple. I really want to try to make green smoothies every morning. You wouldn't believe the energy boost they provide.
The color isn't super gross either, which helps a lot...especially with vegetable-avoiders like my husband. He'll kill me for saying that! In his defense, he HAS gotten much better about eating his greens (minus last night when he tried to remove green beans from his beef and rice). ;) I'll forgive him though, because he totally cooked the whole meal last night.
Gather these ingredients:
And don't worry if you have different milk or peanut butter. I ended up using 1% milk, baby spinach (I've heard it's less bitter than fully-grown spinach...plus that's what I happened to have on hand).
And I used crunchy peanut butter since that's what was sitting in the panty. I ended up loving the texture.
Blend everything up, and you have yourself a healthy snack!

I love green smoothies. I usually use almond milk with banana, spinach, and protein powder. Soo good!
Spinach? That threw me a bit...but I trust you so will try it :)
